Make the mojo
In a pan, warm the annatto oil over medium heat. Add the onions and sauté until tender but not translucent. Stir in minced garlic for 15–20 seconds, just until fragrant. Remove from heat, then add the lime juice and zest. Set aside to cool slightly.
Make the hummus
In a food processor, combine the black beans, bean liquid, adobo, and prepared mojo. Blend until smooth, scraping down the sides with a spatula as needed.
Taste and adjust for salt and acidity by adding more adobo or lime juice. The goal is balance—earthy beans, bright lime, and garlicky depth.
Serving Suggestions:
Sprinkle diced raw onions and fresh lime zest on top for added texture and flavor.
