Hay algo sagrado en la comida que cuenta una historia, sobre todo cuando esa historia empieza en la cocina de tu abuela puertorrique\u00f1a haciendo arroz con gandules<\/a>. La comida ha sido una de mis mejores herramientas en mi viaje de curaci\u00f3n, tanto f\u00edsica como emocional. Tampoco hablo s\u00f3lo de palabras de moda (como antiinflamatorios y antioxidantes). Hablo de los alimentos que nos criaron, los que sentimos como nuestro hogar. Y en mi cocina, eso suele significar arroz con gandules<\/a><\/strong>. <\/p>\n\n

Sanar no significa renunciar al sabor, la tradici\u00f3n o el alma. S\u00f3lo significa que cocinamos con intenci\u00f3n<\/em>. Elegimos ingredientes que nos devuelvan el amor. Vamos m\u00e1s despacio, respiramos y removemos con prop\u00f3sito. As\u00ed que hoy quiero compartir contigo c\u00f3mo tomo este querido plato puertorrique\u00f1o y lo convierto en algo que nutre tanto el cuerpo como el esp\u00edritu. <\/p>\n\n

No siempre pensamos en comida latina cuando pensamos en alimentos curativos. Pero deber\u00edamos. Nuestros ingredientes son ricos, atrevidos y -cuando los preparamos con cuidado- profundamente nutritivos. Por ejemplo, gandules<\/a><\/strong>por ejemplo. Estos peque\u00f1os gandules est\u00e1n repletos de fibra, prote\u00ednas y folatos que favorecen la salud intestinal y regulan el az\u00facar en sangre. El sofrito<\/a><\/strong>-esa mezcla m\u00e1gica de ajo, cebolla, pimientos y hierbas- est\u00e1 lleno de antioxidantes y propiedades antiinflamatorias. <\/p>\n\n

    • 2<\/span> cups<\/span> brown rice<\/span><\/li>
    • 3\u00bd<\/span> cups<\/span> vegetable stock<\/span> can be substituted with water<\/span><\/li>
    • 1<\/span> 15oz<\/span> can of gandules (pigeon peas)<\/span><\/li>
    • 3<\/span> tbsp<\/span> Domestic Gourmet annatto oil (aceite de achiote)<\/span><\/li>
    • \u00bd<\/span> cup<\/span> tomato sauce<\/span><\/li>
    • \u00bd<\/span> chopped small onion<\/span><\/li>
    • \u00bd<\/span> chopped green bell pepper <\/span><\/li>
    • \u00bc<\/span> chopped red bell pepper<\/span><\/li>
    • 4-5<\/span> minced cloves of garlic<\/span><\/li>
    • \u00bc<\/span> bunch<\/span> minced cilantro<\/span><\/li>
    • 2<\/span> leaves<\/span> minced culantro<\/span><\/li>
    • 1<\/span> tsp<\/span> salt<\/span> to taste, based on the salinity of the vegetable stock<\/span><\/li>

        Elaboraci\u00f3n paso a paso<\/h3>
        • Add the rice to a colander and rinse until the water runs clear. Set aside.<\/span><\/div><\/li>
        • Prepare the sofrito* by dicing the onions, peppers, garlic, and herbs with a chef's knife or blending them together in a food processor until smooth. <\/span>

        • Add the annatto oil to the caldero and saut\u00e9 the sofrito (onions, peppers, garlic, herbs) and bay leaf over medium-high heat. <\/span><\/div><\/li>
        • Pour the liquid from the can of gandules into a 4-cup measuring cup (you'll have \u00bd-\u00be cups of liquid), then add the vegetable stock to this until you have 3\u00bd cups of liquid in the measuring cup.<\/span><\/div><\/li>
        • Once the sofrito is fragrant, add the washed brown rice, vegetable stock, tomato sauce, salt*, and saz\u00f3n and bring to a boil. <\/span>
          <\/div>*Taste the liquid to determine whether you need to add additional salt.<\/span><\/div><\/li>
        • Once the rice mixture is boiling, lower the heat until just simmering and cover*. Set a timer for 45 minutes.<\/span>
          <\/div>*If you have a banana leaf, lay it over the caldero and cover it with the lid to infuse the rice. This will impart authentic Indigenous flavor.<\/span><\/div><\/li>
        • When the timer goes off, remove the caldero from the heat, and remove the banana leaf. Gently fluff the rice using a fork and replace the lid. Set aside for 10 minutes to rest. <\/span>
          <\/div>Serve immediately after resting time.<\/span><\/div><\/li><\/ul><\/div>

          Pro Tip:<\/h4>
          • For an additional boost of healing, add \u00bd tsp of ground turmeric. Turmeric aids joints, is anti-inflammatory, helps rid the body of free radicals and toxins, and will not noticeably alter the dish's flavor.<\/span><\/div><\/li>
